Cranberries white chocolate cake

Recently I posted a photo of a cranberry pie to facebook and some of you wanted the recipe, so here it is.  That day I couldn’t take pictures because I was in a hurry for an appointment. Next time there will be pictures!!

 Preheat the oven to 180°C

Grease a round baking tin. You can also use parchment paper as I did.

For this recipe you will need:

1  1/2 cup flour
+ 2 tbsp

1 tbsp baking powder

180 gr unsalted butter

3/4 cup caster sugar
+ 2 tbsp

3 eggs

1 tsp vanilla extract

2 cups cranberries, blueberries OR pitted cherries.*

3/4 cups white chocolate chips

2 egg whites

Icing sugar for dusting over the cake

*You can use what you like the most in a cake. ;)

1. Mix in a large bowl the sifted flour and baking powder. Add the butter, sugar, eggs and the vanilla extract.
Beat until smooth.

2. Stir the 2 tbsp flour and sugar through the cherries and add half of the cherries and the white chocolate chips to the batter. Set this aside for later.

3. Beat the egg whites  until stiff peaks form.

4. Fold the egg white into the batter.

5. Spoon the batter into the prepared tin and sprinkle the rest of the cherries over it.

6. Bake for 45-55 minutes in the preheated oven, or until risen and golden brown.

7. Once it’s ready, dust it with icing sugar.
