Lemon meringue pie recipe

 In Mexico there is this restaurant where they sell the most delicious lemon pie I’ve ever tasted. Ice lemon pie, searching through my old recipes I found a similar one. I went to buy the ingredients I was missing and this was the result.

Lets start with the crust. You will need: OLYMPUS DIGITAL CAMERA

1 cup of flour

100 gr of butter

1 tbsp sugar

1 egg yolk(save the egg white)

1 tsp lemon zest

3 tbsp ice water

2. Add the rest of the ingredients in the center of the flour.
OLYMPUS DIGITAL CAMERA3. Toss with 2 forks until a soft, smooth dough.
OLYMPUS DIGITAL CAMERA4. Roll out dough with a rolling pin and cover a large pie pan .
Chop it with a fork and bake for 15-20 minutes at 200 ºC

While ready , prepare the filling. You will need ;

1 cup of water

1 tbsp of cornstarch

1 can condensed milk

1/4 cup lemon juice

1 tsp lemon zest

2 yolks(save the egg   white)

5. Heat ½ cup of water with lemon zest .
OLYMPUS DIGITAL CAMERA6. When it boils , add the cornstarch dissolved in ½ cup of water.
OLYMPUS DIGITAL CAMERAStir constantly until the consistency thickens.OLYMPUS DIGITAL CAMERA7. Add the condensed milk, lemon juice and simmer 5 more minutes, don’t stop stirring .
OLYMPUS DIGITAL CAMERA8. Remove from the heat . Add the egg yolks and mix well. Heat it again for 2 more minutes .

9. Pour the filling over the baked pie shell.

Now we are going to make the meringue. You will need;         OLYMPUS DIGITAL CAMERA

3 egg whites

1 pinch of cream of tartar

 (   or a bit of lemon juice )

1/2 cup of icing sugar

OLYMPUS DIGITAL CAMERA 10. Beat the egg whites with the cream of tartar until stiff.
OLYMPUS DIGITAL CAMERA 11.Add slowly the icing sugar and continue beating until peaks are formed.OLYMPUS DIGITAL CAMERA 12. Cover the pie shell and put the pie under the grill to brown the meringue.
(As you can see, I forgot to take the meringue out of under the grill on time… oeps.)

Let it set in the refrigerator for a couple of hours. It is best to eat it the same day! ;) Anyway you can not resist eating it.IMG_4375
