Red velvet cake recipe

This is one of the easiest recipe for making a Red velvet cake. As long as you follow the steps of the recipe and  you weight the ingredients, it should be fine.

 Preheat the oven to 200°C

For this recipe you will need:

1 cup of  flour

1 tsp baking powder

1/2 tsp salt

2 tbsp cocoa powder

1/2 cup of butter

1 1/4 cups of sugar

2 large eggs

1 tsp vanilia extract

1 cup of buttermilk

2 tbsp red food coloring

1 tsp white vinegar

1tsp baking soda

1. Mix in a large bowl the sifted flour, cocoa powder, baking powder and salt. Set this aside for later.

2. Combine the buttermilk with the food coloring and set  aside.

3. Beat the butter until soft, add the sugar and whisk it until  you get a smooth mixture. Then add the eggs one at a time . Scrape occasionally along the edge, so that everything is well incorporated . Then add the vanilla extract and beat further for a minute or two.

4. Low the speed of your mixer. Alternately, add the flour mixture and the colored buttermilk. End it with the flour.

5. In a small bowl, combine the vinegar with the baking soda. Mix it with a spatula into the mixture.

6. Grease two baking tins  and use parchment paper for the bottom. (if you do not have two , bake the cakes one at a time)
Divide the mixture between the two tins. Bake the cake 20 to 25 minutes in the oven.

 Once the cakes are out of the oven, you should better wait until they are cooled down before covering them with frosting.

For the frosting you will need:

200g cream cheese

200g white chocolate

100g of butter

8. Melt the white chocolate au bain-marie and then let it become lukewarm.

9. In a large bowl, whisk the cream cheese until smooth. Gradually add the melted chocolate and soft butter.

10. Mix until it has the structure of whipped cream.

10. Then fill the cake and the glaze.
