Blueberry & Coconut muffins

First of all, I’m not a professional in the kitchen but I do my very best.

A friend of mine came visit me and I thought it would be nice to bake something sweet and then
pair it with a hot beverage while chatting. I’ve tried this recipe with cherries before but for this time
I chose blueberries instead.

For this recipe you will need;

150g blueberries 40 gr grated coconut
12 blueberries for decoration 2 eggs
280 g flour 250 ml coconut milk
5 g baking powder 90 g butter, softened
1 pinch of salt 5 ml vanilla essence
120 g sugar

Preheat your oven to 200 ºC

 1. This recipe is enough for 12 muffins. Take muffin tins and place in paper cases.

2. Mix the flour, baking powder and salt in a large bowl. Mix the sugar, grated coconut and blueberry in the same bowl.bosbes

3. Beat the eggs in a bowl. Whisk the coconut milk, butter and vanilla aroma. eieren

4. Make a well in the center of the dry ingredients and pour the egg mixture into it. Stir until just mixed, don’t stir too long.eimengsel

5. Scoop the batter into the muffin tins, sprinkle a little grated coconut on top and put a fresh blueberry on each muffin to decorate it.muffinsklaar

6.Let the muffins cool down a little and take a bite of it with a cup of tea or a drink of your choice. ;)
