Cauliflower Pizza crust

I have been telling everyone about this recipe I found a few months back at someone’s blog. I tried to find the original recipe without success but if you google “cauliflower pizza crust” you will get a lot more recipes. Even if you aren’t allowed to eat carbs or gluten you can eat this kind of pizza crust.

For the crust I made you will need:

1 big cauliflower head 2 eggs (or 1 large)
1/2 cup mozzarella   (grated) 1/2 cup parmesan cheese (grated) *
1/4 tsb Garlic puree Oregano
Salt & pepper
* I used Grana Padano because I couldn’t find parmesan cheese…oeps!

My pizza topping was tomato sauce, mozzarella,  prosciutto and arugula. Feel free to use the ingredients of your preference. ;)

Preheat the oven to 220°C


1. Prepare and weight your ingredients.

2. The first step is to grate the cauliflower careful not to mash it. You can use a grater or food processor.


3. Place the shredded cauliflower onto a plate and microwave for 6 minutes. (or until soft).


4. Wait a moment until it cools down a little. Then use a kitchen towel to wring all the moisture out of the cauliflower.


5. Put the cauliflower  in a bowl with both cheeses, eggs, oregano, garlic puree and salt & pepper. **


**Use the desired amount of oregano, salt & pepper


6. Mix it together until a proper dough consistency.


7.  Take a piece of parchment paper, rub it with a bit of oil and stretch the dough in the form of a pizza.
Put it in the oven for about 15 minutes or at least until it’s bronzed.


8. Take the crust out of the oven and top it with the tomato sauce, mozzarrella and prosciutto. Pop it back in the oven for a couple of minutes until  the cheese melt.


9. At last decorate the pizza with arugula and enjoy it with a glass of wine.
