Mexican Wedding Cookies (Polvorones)

Polvorones are original from Spain. We mexicans usually make them for weddings and different celebrations. They usually are made with pecans but this time I made it with peanuts instead.

*This recipe is good for 40 pieces of delicious polvorones!

Preheat the oven to 190 C

For this recipe you will need:

200g butter, softened

200ml condensed milk

2 1/2 cups of flour

1 1/2 cups crushed peanuts

1 1/4 cups of cornstarch

1/2 cup icing sugar

3 eggs

1tsp baking powder

1/4 tsp salt

1. Beat the butter until light and fluffy.

2. Add the condensed milk, eggs and crushed peanuts and set the mixture aside.

3. On a table, sift the flour with the cornstarch, baking powder and salt.

4.. Form a well in the center and add the mixture.

5. Knead with your hands to form a smooth paste.

6. Take portions of  the dough and form balls the size of a walnut. Place the dough in a greased oven tray (or use parchment paper). Bake 10 to 15 minutes without letting them brown.

7. Once they come out of the oven, let the cool down for a couple of minutes. Sprinkle with icing sugar.

Ps. Packed with tissue paper would make good gifts… ;)

Until the next time… Cheers!
